This tasty cookie is a great valentines day treat! I had wanted to make them for quite a while but didn't want to do it unless I had a kitchen aid mixer. I can't wait until I own my own one day :)
I made the cookiesfor both Chad and my book club ladies (meg, casey, kate) and everyone liked them! Especially the boy!
Red Velvet Chocolate Chip Cookies
Ingredients:
1/2 c. unsalted butter at room temperature
1/2 c. light brown sugar, packed
1 large egg
1 teaspoon vanilla
1 and 1/2 c. all- purpose flour
1 teaspoon baking soda
1/4 teaspoon salt
1/3 c. cocoa powder
Red Food Coloring
1/2 c. White chocolate chips
- Preheat oven at 350 degrees. Line two baking sheets with wax or parchment paper
- Using a kitchen aid mixer with the paddle attachment (the dough is VERY thick) cream butter and oth sugars on medium (about 2 minutes)
- Add food coloring until desired color is reached
- Add the egg and vanilla, mixing well.
- Reduce the mixer speed to low and add the flour, baking soda, salt, and cocoa powder, mixing thoroughly
- Using a spatula, fold in white chocolate chips
- Drop dough into mounds about two inches apart from one another. Lightly flatten each cookie dough mound with your fingers or the back of a spoon.
- Bake for 10-12 minutes
